Oh, Donna! thank you so much. I'm trying this tonight! I recently started having problems with meat. I just don't desire them anymore. I've found that hiding meats definately helps me tolerate them more. I definately need the protien so this might just do the trick!! Thank you. ~Shan

Smart thinking, Donna! I'm with Penelope on this one too - it would be great for omnivores and time-stretched cooks everywhere. And if making this for folks who don't eat beef, it would likely be tasty with tofu, or maybe ground turkey or crumbled sausage as another alternative. * Janet

Hi Donna, I have grown up kids that will eat anything so I'm going to try your recipe just cause it looks good! It also looks like a great "make ahead" after a long day at work. Thanks for the post.

Ymmers, boy was this sneaky, for a child who ONLY likes veggies and won't eat her meat, this worked wonders!! Fry 3/4 bag of hashbrowns, season as desired Add 1 8 oz container sour cream 1 can cream of mushroom soup 1.5 cups cheese shredded. Stir to combine in fry pan, remove from heat. MEANWHILE... Scramble fry ground beef until cooked through, Add 1 can cream of mushroom soup 1 cup frozen mixed veggies Stir to combine PREHEAT OVEN TO 350 Place hashbrown mix in the bottom of a casserole dish, top with meat/soup/veg mix, sprinkle with 1/2 cup shredded cheese. Bake until hot through. All the young'ins will love this, it is a take on shepherd's pie. There are the veggies hidden within or in my case, the meat get's mixed in when you serve it!! GENIUS!!! LOL
