Angela, my recipe is called Mom's Chicken and Buttermilk Dumplings. I bumped it up for you. It's my favorite recipe for chicken and dumplings. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"

Angela, I bumped up 40 cloves garlic chicken -that's what I like to use for a whole chicken. My other favorite thing to do with a whole chicken is make chicken and dumplings. Otherwise, I love marinading them overnight in citrus juice and throwing them on my rotissarie just like Juan Pollo-yum! Then I make salsa, rice, refried beans ,potato salad and tortillas to serve with it and make little chicken tacos. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future" -- Edited by 2864590 at 03/05/2009 6:01 PM PST

Angela, One simple way is to pat it dry and rub it with oil based dressing, we like Greek and Asian. You could take some dry bbq rub or dry onion soup mix and sprinkle all over the bird (it sticks better if the bird is not patted dry). Our favorite is to peal, core and slice thinly an apple, slice a medium onion, place in the bottom, one can of cream of anything soup stirred with a teaspoon of rosemary poured over the chicken breast side up (the sauce is to die for). If it is a roaster and has a popup timer make sure you can see it. One suggestion is to remove the kidneys, they can give the broth a bitter flavor. They are located just inside the bird along the backbone.
