Hi Penny, I know I'm too late for your pool party but I just thought I'd let you know that I made the Warm Italian Spread that you mentioned. I made it for our Canada Day party and everyone raved about it. Maybe you can file it away for your next party. I have also been thinking about all of the variations you could do with this recipe - a pizza one with pizza sauce, green peppers and chopped up pepperoni or a Bruschetta one or even a Greek one with chopped tomatoes and olives and a sprinkle of Feta cheese on top. -- Carol B.

Your menu sounds fabulous, as does the pool itself. So nice of you to invite all of us over. I like guacamole on nearly everything, Jennifer - especially a nice cheeseburger. Yum. Now I want guacamole. -- Lisa

Penny, since you're having chips and salsa , guacamole would be so yummy too! Out here in California we put it on everything, even our cheeseburgers. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"

Fruit kabobs!!!! Last year I had bought some cute buckets and added some styrofoam to the bucket and glued it down on the sides with a touch of hot glue.. Took some grapes, strawberries, melons, blueberries, peach/nectarine wedges, skewers and my handy dandy flower cookie cutters.... put a few fruits on each skewer and topped the skewer off with a flower fruit cut with the cookie cutter.. When I was done it looked like a colorful potted plant. You can make these the night before... and put in the fridge with some plastic wrap around it. Light, refreshing and colorful! Not to mention mouth watering.

Penny, The spring rolls are great ( I like the ones I have done in red wine or dark beer (hiccup!), it gives a flavor that is unexpected. You can make them before, cover and fridge. If you are having sausages cook them the day before on the grill and add them to some cooked onions and beer (hot dogswork too), simmer for a while before you cool (if you live in a dry area, apple juice works) Just reheat them (in the beer and onions) before serving them or use a crock pot. -- Edited by 2598976 at 08/03/2009 7:05 PM PDT -- Edited by 2598976 at 08/03/2009 7:06 PM PDT

Scott, I have to log in more often. How did i miss these super recipes? Your right, it is a lot of work. The grilling is standard fare but I always go overboard with the appetizers. I'm particularly drawn to the spring rolls. I was reading the recipe and nice suprise... no deep frying. Thanks for sharing. Penny -- chopsticks are the reason the Japanese did not invent custard

Cin, this looks great. Is this a recipe that's better made the night before so the flavors marinate? Penny -- chopsticks are the reason the Japanese did not invent custard

This may be one of the usual items served at parties....but it's a good one. Chicken Salad 1 (2lb) rotisserie chicken, skin removed and meat pulled from bones 1 1/4 cups finely chopped green apple 1/2 cup finely chopped celery 1/2 cup chopped cashews 1/2 cup chopped green onions 1/2 cup mayonnaise 2 Tbsp extra-light olive oil 2 tsp fresh lemon juice 3/4 tsp ground black pepper 1/2 tsp coarse salt In the food processor, pulse chicken 30 seconds, or until coarse with small pieces... OR, I guess you could use 'canned chicken' packed in water & drained...it just won't taste as special ;o) In a large bowl, combine chicken, apple, celery, cashews, and green onions. Stir in the mayo, olive oil, lemon juice, pepper, and salt until mixture is well combined. Serve on Romaine lettuce leaves (roll it up of leave it flat)...OR...serve in the middle of a pretty plate with your favorite crackers and chips. -- >> ~~>*>Cin(\0/)<*<~~ << >> ><(((*>Jesus<*)))>< <<

Hi everyone, looking for some new ideas for appetizers for my annual big pool party. Did see one that looked good in Kraft Food and Family Magazine that I might try called Warm Itatiano Spread on page 30. Looking for something different than the usual stuffed breads, eggs etc. Thanks. Penny. -- chopsticks are the reason the Japanese did not invent custard
