Hi Penny, I know I'm too late for your pool party but I just thought I'd let you know that I made the Warm Italian Spread that you mentioned. I made it for our Canada Day party and everyone raved about it. Maybe you can file it away for your next party. I have also been thinking about all of the variations you could do with this recipe - a pizza one with pizza sauce, green peppers and chopped up pepperoni or a Bruschetta one or even a Greek one with chopped tomatoes and olives and a sprinkle of Feta cheese on top.

Your menu sounds fabulous, as does the pool itself. So nice of you to invite all of us over. :-D

I like guacamole on nearly everything, Jennifer - especially a nice cheeseburger. Yum. Now I want guacamole. :^O

Penny, since you're having chips and salsa , guacamole would be so yummy too! Out here in California we put it on everything, even our cheeseburgers.

Mom, super cute and thank you. I remember you doing this a while back for some event and you thought "it's so expensive to buy, I can do this myself" Good for you.

Drumsticks in barbeque sauce ( sweet baby Ray's, Jen )
    Deviled eggs
    Spring rolls ( Scott's)
    Chicken salad (Cin's)
    Salsa and chips
    and any more suggestions

    For grilling will be
    Hamburgers
    Hotdog's
    Italian sausage
    ribs

    For dessert
    Icecream cake
    Brownies
    Fruit kabobs ( Mom's)

    For drinks
    Wine
    Beer
    Water

    Fruit kabobs!!!!
Last year I had bought some cute buckets and added some styrofoam to the bucket and glued it down on the sides with a touch of hot glue..

Took some grapes, strawberries, melons, blueberries, peach/nectarine wedges, skewers and my handy dandy flower cookie cutters....

put a few fruits on each skewer and topped the skewer off with a flower fruit cut with the cookie cutter.. When I was done it looked like a colorful potted plant. You can make these the night before... and put in the fridge with some plastic wrap around it.

Light, refreshing and colorful! Not to mention mouth watering.

    Penny,

The spring rolls are great ( I like the ones I have done in red wine or dark beer (hiccup!), it gives a flavor that is unexpected. You can make them before, cover and fridge. If you are having sausages cook them the day before on the grill and add them to some cooked onions and beer (hot dogswork too), simmer for a while before you cool (if you live in a dry area, apple juice works) Just reheat them (in the beer and onions) before serving them or use a crock pot.

Scott, I have to log in more often. How did i miss these super recipes? Your right, it is a lot of work. The grilling is standard fare but I always go overboard with the appetizers. I'm particularly drawn to the spring rolls. I was reading the recipe and nice suprise... no deep frying.
    Thanks for sharing.

Cin, this looks great. Is this a recipe that's better made the night before so the flavors marinate?

    Penny,

Parties are fun but a lot of work for the hostess, try and make as much as you can the days before.

    Salami crisps
    http://community.campbellkitchen.com/topic/Timesavers/Salami-Crisps-Meat/400001512&#msg400010446

    Stuffed Cherry Tomatoes

8 oz. of reduced fat cream cheese, softened
4 T of reduced fat mayonnaise
1 package of Hidden Valley Ranch mix
    ~3 dozen cherry tomatoes

Mix the first three ingredients in a bowl and set aside.

Remove caps and seeds of tomatoes. Spoon cream cheese mixture into either a plastic baggie or a pastry bag. Fill tomatoes with cream cheese mixture and refrigerate until ready to serve.

I have used small plum tomatoes cut in half.

Spring rolls - they are fun and can be made ahead

    Mediterranean Marinated Cheese

Take an 8 oz package of cream cheese or fresh Mozzarella and cut it into 24 little squares. (more squares if you want them smaller) Put them in a pie plate and pour 1/4 to 1/2 cup of Sundried Tomato and Oregano salad dressing on top. Add some fresh or dried rosemary and a teaspoon of whole black peppercorns. Cover with plastic wrap and let them sit overnight. Serve them with crackers and tooth picks.

If you don't have access to fresh Mozzarella, regular will work but make 2 days ahead. I have used other dressings, but I really liked Greek the best.

This may be one of the usual items served at parties....but it's a good one.

    Chicken Salad
1 (2lb) rotisserie chicken, skin removed and meat pulled from bones
1 1/4 cups finely chopped green apple
    1/2 cup finely chopped celery
    1/2 cup chopped cashews
    1/2 cup chopped green onions
    1/2 cup mayonnaise
    2 Tbsp extra-light olive oil
    2 tsp fresh lemon juice
    3/4 tsp ground black pepper
    1/2 tsp coarse salt

In the food processor, pulse chicken 30 seconds, or until coarse with small pieces...

OR, I guess you could use 'canned chicken' packed in water & drained...it just won't taste as special ;o)

In a large bowl, combine chicken, apple, celery, cashews, and green onions. Stir in the mayo, olive oil, lemon juice, pepper, and salt until mixture is well combined.

Serve on Romaine lettuce leaves (roll it up of leave it flat)...OR...serve in the middle of a pretty plate with your favorite crackers and chips.

Hi everyone, looking for some new ideas for appetizers for my annual big pool party. Did see one that looked good in Kraft Food and Family Magazine that I might try called Warm Itatiano Spread on page 30. Looking for something different than the usual stuffed breads, eggs etc. Thanks.
