    I have to laugh.. my son went back to college yesterday. He has his own apartment this year... I told him about s-t-r-e-t-c-h-i-n-g his budget with soup and when he has left overs how to use soup to get another meal out of it...

    I also told him to look at this site for idea if he needs them...

    So... he went shopping...

    IN MY PANTRY....

    took every can of soup... every container of broth....every condiment...
    every closed box of cereal and cracker....

    Guess his pantry is nice and full now...

    Gotta love your kids!!

    This was actually a subject of discussion at dinner this week. My oldest son (not the pastry chef wannabe) is getting his own apartment this year at college. Well..he is sharing it with 3 other boys.... We were talking about inexpensive/fast meals to cook. I told him spaghetti was a must in the pantry... and Campbells soup. I plan on stocking him up in pasta and soup before he leaves next week. I gave him a bunch of recipes from here and showed him how to use leftovers and stretch the meal with a can of soup.

    He complains he gained 10 lbs when he came home this summer from my cooking :)

    Let's see how he does on his own :)

    Momof3, I think of a can of soup more as the key to stretch (and improve or complete) other recipes, more than something I'd stretch. But I like this idea, and Scott's way to make a beef stew too! • Janet

    My favorite beef stew is made from leftover pot roast with the roasted veges (cut up into small pieces), add the gravy and some cans of Campbell's beef consume.

    Stretching that can of Campbells soup

    This week at the rink we were sitting in the conference room talking about how we are all stretching our dollars. One of the moms said she buys a can of Campbells chunky soups and adds a can of beef broth and from there the fun begins. She said she does not have time to make a stew or hearty soap from scratch so she uses the one can of soup and broth as her base. Then adds beans and/or chops some extra veggies.. simmers it for a bit.. and voila.. what was a meal for 2 now is a meal for 4 with leftovers.. She is always bringing in leftovers.. heating it in the microwave and making our office smell wonderful!

    Anyone else out there with ideas on how to stretch a can of soup?
