Linda, I know what you schedule is like. I have two sons and are weekends are busy and so is Monday & Tuesday. Do you have the Campbells Cookbook? I have it and it has several quick recipes. Maybe if you don't have it, you could e-mail them and have it sent to you. Anne Dadosky

I've got an idea. Did you ever think of making vegetable lasagna? You could cut the veggies up ahead of time and adapt it to the microwave to cook. Or, do you have a crockpot. We are a family of six and busy! I have one night per week that no one is allowed to make any plans for. We schedule it at the start of the week when everyone knows their schedule. Then we have pizza or a one dish meal and watch a video together ... one the whole family can enjoy. I also make sure SUnday night is for a bigger dinner around the table so we can discuss the week ahead and the week that has passed. During the summer it's barbeque night...or fire night. Anything to have us spending time together makes us closer.

Hello Lauren: I guess my first question would be are you all busy all weekend as well or are Sundays more available? If so you might consider making Sunday your special dinner day. You could even have a large meal earlier around two in the afternoon and then munchies later when everyone is hungry again. When our children were home we were always running to basketball, or softball or little league. So I know what you are saying. During the summer there were games every night of the week so meals were a free-for-all. So I use to insist on Sunday dinner time. This was the time I would make a large meal, i.e. ham, turkey etc. and then I could use the rest of the leftovers for meals and lunches the rest of the week. For instance with a ham, you can have sandwiches or ham strata is awesome. With turkey you can use some of the Campbells recipes for soup or casseroles. The possiblities are endless. ALWAYS make time for your family though, they are with us such a short time enjoy it! Pamela Persson

Yes, there is three in our family too and our schedules can get out of control sometimes too. I use opportunities when it may just be two of us to prepare things like quiche, lasagna, or boiled chicken that you can freeze and then prepare in no time flat later. We work together so that we can maximize our time together. I think it is great to keep kids active as long as it does not interfere with school, sleep and it's something the child wants to do. Family time can also be centered around those activities. A picnic at the ball park before the game or even having a late dinner together after the game. Good Luck!

I think a lot of kids are over-scheduled with special activities, perhaps because both parents work and it's easier for them to have the kids someplace they know to be safe. While you might need to eat dinner at a later time I think this might give you the opportunity to make many nice meals which, if necessary, could be reheated once everyone is home.

My family is pretty tough to get together, even though there are only three of us. My son is always busy with afterschool activities and my boyfriend and I work crazy schedules. Do you have any tips on what sort of meals I could plan in advance and have nearly ready to go when everyone is finally home? Also, what thoughts can you share on how we could make this time special?
