Cin, Where did you get the recipie from, I posted it to a site a while ago , the blog that is gone now. Here is my Avocado, tomato and onion salid. Grilled Tomato, Avocado and Onion Salad tomatoes, sliced very thick (enough to cover the platter) 4 avocados or more if you have a big platter, peeled, pitted and quartered (If they are going to stand for a while sprinkle with lemon juice) extra virgin olive oil 1-2 red onion, sliced, maybe 1/4 inch (enough to cover each slice of tomato) lemon juice (fresh works best or bottled) 1 cup pesto sauce (Tzatziki sauce works well for lighter) If you have a big platter increase. Grated romano or other Italian hard cheese 1/3 - 1/2 cup pine nuts toasted (optional) Preheat a grill. (a medium hot grill works best) Place tomatoes, avocado and slices of onion on a cookie sheet single layer and drizzle with olive oil (I mist with lemon juice first and sprinkle with a little salt then mist with oil). Put sliced tomato on hot grill oiled side down (until they get grill marks, it doesn't take long, turn if you like). Do the same with the onion (flip if you like). Place avocado pit side down on a hot open grill, so grill marks appear, flip to other side. I like to keep the grill closed as much as possible to add a little smoke. Place on platter as they come off the grill. Ruff chop the avocado and spread over onion. Drizzle with the mixture of 2 parts olive oil and one part lemon juice (I take 4T oil and 2T lemon and shake it in a jar). Top with pesto or Tzatziki sauce and nuts. Serve with pancake turner to get the whole tomato slice.

Scott, I got this recipe in an email yesterday.....almost posted it but didn't for some reason. Glad you did, it sounded good....refreshing. Got this one the other day, think it's good too. You may like it. Grilled Avocado, tomato and Red Onion Salad 10 tomatoes, quartered 4 avocados, peeled, halved, and pitted Extra-virgin olive oil, for drizzling 1 red onion, sliced 1/2 lemon 1 cup pesto sauce 1/2 cup pine nuts Parmiggiano-Reggiano Preheat a grill over medium heat. Cover a large tray with tomato quarters, and set aside. Place avocado halves in a bowl and drizzle with olive oil. Place each half on a hot open grill for about 30 to 45 seconds. Remove and place on top of the tomatoes arranged on tray. Drizzle with olive oil again. In another bowl, cover the red onion slices with the juice from the lemon half and olive oil. Place onions in the empty avocado pit holes. Cover with the lemon/olive oil mix. Then, top with pesto, distributing generously on all sides. Tomato & Onion Salad 4 medium tomatoes 1/4 cup nonfat plain yogurt 2 tsp honey mustard 2 tsp sherry-wine vinegar (I use rice wine vinegar) 1/4 cup fine diced red onion Salt and freshly ground salt to taste 2 tbsp chopped fresh cilantro or other fresh herbs Slice tomatoes and arrange on a serving plate. Whisk yogurt and mustard together and whisk in vinegar. Add onion. Salt and pepper tomatoes and spoon sauce over them. Sprinkle with cilantro. Variation: Use very thin slices of red onion and place on tomato slices then add sauce. If no fresh herbs, then make the dressing a few hrs. ahead with teaspoons of dry. A little grated cucumber in the sauce gives it a different twist, let the sauce set a while for the flavors mingle.
