Okay, soooo like asparagus topic "AGAIN"! Saturday night is usually our "grill" night. I always seem to want grilled talapia with lemon squeezed atop, some sort of Cuban-style rice with mango, pinapple or such, steamed spinach, asparagus, or green beans. So, here we are last Sat. evening. I bought a single bunch of fresh asparagus. My husband laid the spears in hot olive oil, until spears were hot. Dredged each spear in crushed croutons, then rolled in parmesean cheese till coated! YUM-Ohhhhhhhhh!!! So simple yet so delish! NOT a difficult way to get a great flavor. It was so good, we made it for appetizer Sunday, for the family for Father's Day!

Out here they have stands down in L.A. that serve corn dipped in butter( or sometimes mayo) and rolled in chili powder and other spices .I have never had it, but everyone says it's great. I would probably like it , since I buy chili dipped mango and watermelon candy with tamarind sauce and chili mango popsicles. Those are very popular out here-all the ice cream trucks sell them.Lime and salt popsicles are my favorite.Chamoy popsicles are great too. -- Jennifer When baking, follow directions. I have had fried corn on the cob. It was a bit greasy for me.

There is a vendor at our local farmer's market that sells fried asparagus and I've always wanted to try it, but I'm usually there pretty early in the morning. I think I'll give making these a try soon. -- ~~"Crock Pot Queen" Sherrie

Jennifer, I fry other vegetables but never thought about frying asparagus. Thanks for the recipe. My son will take fresh collard greens and saute them in fresh garlic and olive oil. I was surprised how good they were. He is very creative in the kitchen. When he comes home it seems I always learn something new from him.
