My son made this at college.. trying to impress a girl I guess?? Anyhow..he said..he used plain cheese..not the "cheese sauce" on the bottom.. then the cubed chicken..then a thin layer of cheese sauce on top of the chicken.. he preferred it this way. He said it was not messy at all..

Maybe they really are paying attention to mom in the kitchen??

Thanks for the answer, momof3. I wasn't able to find puff pastry at the stores I went to this weekend, but I know where to find it at Albertsons. I'll go there this week and pick some up. I can't wait to try this!

I guess I should of been more specific.. I've made this 3 times so far with the puff pasty dough..

The first time I just piled on the cheese and chicken like I do when I use the refridgerator buscuits. It came out a sloppy mess. My husband still insist the bottom dough was not cooked because of that.

The second time I dolloped it and spread it as far as I can tell it came out OK.. my husband still said the bottom was not cooked enough for him..

The third time, this week, I put down a thin layer of cheese... maybe like a person with a heavy hand would put a layer of mayo on a sandwich... I think put the cooked chicken on top of this.. and then another thin layer of cheese.. but..instead of cutting up the chicken.. I cooked it up..and layed it down whole.. not cubed... and then put another thin layer on top of this...
    My husband verdict......

    Da da da da.....

    Keeping you in suspense???

    It was perfect...

So.. just some practice and it comes out all goodly!!!

This does sound good. When you say "layer", are you saying to sort of spread the cheese on as though it was mayo or mustard on a sandwich, rather than to glop a dollop on there? Does it leak if you use too much or does it make the whole thing soggy? I guess the best way to find out would be to try to make them for myself and experiment. :-D I think the combination of flavors sounds like a real winner.

This sounds so good!!! Do you remember about how much cheese you used on the bottom?

I've made this recipe with refrigerator biscuits before. We loved it. I decided to try it with puff pastry.. YUMMY!!! I think my picky son liked it better..

    1 sheet puff pastry thawed
    1 lb boneless chicken breast
butter or non stick spray for cooking chicken
1 can Campbells Cheddar cheese soup
    pepper

Cut up the chicken into cubes and cook on stove top until browned.
In a seperate sauce pan cook the soup with a can of milk. Untill it all comes together.
I like to add a sprinkle of pepper or a dash of hot sauce to give it a slight zing.

put a THIN layer of cheese sauce down on the puff pastry. Layer the chicken onto the cheese sauce.

If you use to much cheese sauce it gets all "yucky."

Pull up the edges of the puff pastry so it comes together on top. Using damp fingers help..this way the puff pastry will not stick to your fingers.

Put on a greased cookie sheet.

Cook about 15-18 minutes or until pastry is puffed and golden brown.

Slice and enjoy. My son likes extra cheese sauce on the side for dipping.

I served this with a salad with Balsamic Vinagerette dressing.. YUMMMM
