1 1/2 lbs boneless skinless chicken breasts (cut into small pieces) 1/8 cup red wine or rice wine vinegar 1/2 lime juiced (I used the whole lime, what are you going to do with the other half) (lemon works) 1 teaspoon sugar 1/2 teaspoon salt 1/2 teaspoon ground black pepper 2 green onions (chopped) 2 garlic cloves (minced) 1 teaspoon dried oregano 6 inch flour/corn tortillas tomato (diced) shredded lettuce Monterey jack cheese (brick works try any light tasting cheese) salsa Sour cream (optional but soo good) Add a little oil to the pan and sauté chicken pieces in the pan until no longer pink and has a little brown. Add vinegar, lime juice, sugar, salt, pepper, garlic and oregano. Simmer for another 10 minutes toss in green onions. Warm tortillas and add chicken mixture to each one evenly. Top with cheese, tomato, lettuce and salsa. I double this and freeze for a quick meal. Remove as much air as possible or use a vac-bag. It also makes an interesting chicken salad. Tzatziki works well with a little feta cheese instead of salsa and sour cream.
