I got a bunch of ripe peaches at the Green City Market. They were handing out cards with things to do with them. I tried this and it was great on pancakes, waffles, and english muffins. With in hrs. of bringing them home the whole place smelled like a peach. Fresh Peach Spread Preheat oven to 450 Line a medium shallow baking dish with foil. Cut the peaches in halve, remove stone and score the flesh like you would for a mango. Drizzle with honey and cook under the broiler for 5-10 minutes or so, until the peaches are juicy and slightly caramelized. Remove from oven and allow to cool for at least 10 minutes. You can then slip the peach chunks out of the skin. Place the peachy bits in a bowl and drizzle with any honey-peach syrup left in the baking dish, plus a little extra honey if you want. Sprinkle with cinnamon to taste, or not and toss to coat evenly. Mash to desired consistency. Place in refrigerator to chill. It will keep in the frig for 2 weeks and freezes well. My peaches were very sweet, so I used just a dribble of honey.
