Hi, Katie!! Welcome to the table!!! Hashbrown casserole is a huge favorite around my house. Your version varies a bit from the one that I use and I think I might try it next time I make this. Change is sometimes good, right?? Anyway, thank you for posting this. I can't wait to try it. I hope that we see many more posts from you in the future. ~Shan

This rocks. 1 bag diced hashbrowns, 1 can sliced mushrooms, and about ten freshly diced mushrooms, 1 can creamier mushroom soup, 1 tub of fat free sour cream, 2 cups shredded cheddar or marble cheese. Mix all ingredients together, saving 1 cup of cheese and then pack into a casserole dish, top with the remaining cheese, cover with tin foil and bake at 350 for 15 - 20 minutes depending on oven, uncover for 5 more minutes on broil. Let stand for 5 minutes and serve. AWESOME!
