after the childhood trauma of nasty instant scalloped potatoes at home they're not really something i think of when planning menus. however you all make them sound good...potatoes cream and cheese shouldn't be a bad thing...so i'm determined to give them another chance.

I make a white sauce like Penny, with butter , onion, garlic, flour, milk (or half &half), salt and white pepper, then I melt Velveeta into it and layer it with the potatoes and lots of buttered bread crumbs on top. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"

This is one of my favorite meals.... Yes, I eat ham When I was young we were kosher in the house.. I think the day my grandmother passed away we went from the funeral to the store for bacon to the house.. Only kidding.. but that is what it seemed like. I have to admit I cheat when I make this.. I get the family size box of Betty Crocker scalloped potatoes and I get a ham steak.. make the potatoes and cube the ham into it. Make a salad with balsamic vinegerette dressing.. it's a hit in my house!!! I do intend to try you recipe!! It looks yummy and cheesy!!! Thanks for sharing!

I fix mine just like Scott, plenty creamy for me. The addition of cottage cheese sounds like a great idea. My original recipe calls for 1/4 cup chopped bell pepper and 1 tblsp chopped pimento (good additions but I'm too lazy and it's too good without). Like to substitute 1/2 to 1 lb of smoked sausage cut into coins for the ham. But I only use 1/2 cup milk. Mom makes the same dish without the cream of mushroom, but uses the 1 to 1-1/2 cups of milk and 1/2 cup of flour. -- ....... eat mo' grits

> I made these last night. I didn't use the flour and use half the cheese (it was extra sharp cheddar) and didn't peel the potatoes (they were gold and they have a soft skin). I used leftover ham from the holidays diced very small and made 3 layers. I added a little cheese to the top. It is a real keeper. We both had 2 helpings. Next time I will add some cottage cheese to the layers to give it a more creamy taste (that may be what the flour does). Scott, the way I make this dish really creamy is instead of layering flour and milk, I cook the flour and milk to make a white sauce. I then toss the sliced potatoes in it so they are well coated. I then layer as you do with ham, cheese and extra white sauce and bake. Penny. -- ....A balanced diet is a cookie in each hand...
