I also think baby carrots would be a good substitute , maybe cauiflower and carrots. I would serve it with rice or noodles.

Hi Carman, how about using cream of mushroom soup and fresh mushrooms as the veg.

Hi Carmen! Welcome!  Since the recipe calls for cheese broccoli soup, I would change that to the cheddar cheese soup and sustitute cauliflower for the broccoli. Just want to see if anyone can suggest any substitutions for the broccoli, someone I want to make this for won't eat broccoli. Any suggestions?
