I like using both......love making Cakes from SCRATCH, but, do like using the mixes when in a hurry......or to make box-mix soft Cookies. I was mainly posting this for the girls who were saying they didn't know how to or didn't feel Comfortable Baking and Cooking... -- Cin(\0/)

Cin, do you find using a boxed cake mix all that much simpler than making a "scratch" cake? Some fancier home-made cakes certainly have a lot of of steps and ingredients, but it's always seemed that most regular cakes use stuff we have in the kitchen anyway, and don't most mix cakes require the addition of other things? Now you've got me thinking of tasty, easy cakes - maybe a yummy tomato soup cake! • Janet

How to Make a Boxed Cake Mix Taste More Like Homemade Follow the cake baking instructions on the boxed cake mix: The only difference will be to add the instant pudding to the cake mix before adding any of the liquid ingredients. The pudding flavor is not important. If baking the yellow cake, French vanilla or regular vanilla flavored instant pudding is a nice compliment. For those with more adventurous taste buds, try adding instant butterscotch pudding. For a richer chocolate cake add instant chocolate pudding. Add all the liquid ingredients and mix in accordance with the instructions on the cake box. When the cake consistency is no longer powdery, add a cup of sour cream. Continue to mix or beat as instructed. Do not be alarmed if the batter looks like it's growing. The batter will be much fluffier than straight forward cake mix. This step is for chocolate chip lovers only: Sprinkle in half-cup of chocolate chips. Using a spoon, mix the chocolate chips into the batter. After pouring the fluffy batter into the cake pan, unwrap several chocolate kisses and place them cone side down into the batter. Don't force them all the way through the batter; just place them so the bottom of the chocolate kiss is even with the surface of the cake batter. The hard work is all done. Now bake the cake in accordance with the instructions on the cake box. -- Cin(\0/)
