Scott, my family and friends have passed this recipe around and while I haven't done it that way , alot of them say that when they are pressed for time, they don't bake it either. They just toss the noodles with the warmed sauce and eat it as is. Jennifer, I have made something like this, but I used mild cheese and salsa. I didn't bake it but added the pasta to the hot sauce and served it with some parmesan cheese on the side

Mexican Chicken Spaghetti....using Velveeta!

This is what Velveeta was made for-yum! 1lb boneless ,skinless chicken breasts, cooked and cubed 1 (8 ounce) package spaghetti, cooked and drained 1 can cream of celery soup 1 can cream of mushroom soup 8 ounces Velveeta, cubed 1/4 cup butter 1 (10 ounce) can diced tomatoes with green chiles(Rotel) Combine all ingredients except spaghetti in a large saucepan and stir until melted and well combined. Add spaghetti and toss until coated. Pour into a greased 13x9 baking dish and bake at 350 for 30 minutes until hot and bubbly. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"
