Thanks to everyone who chimed in on the food processor issue. I also like things rough chopped so maybe I'll just keep hand-chopping.  I love artichokes. Love them! They are a must for pasta salad for me now. I have added leftover salmon to a pasta salad too and liked that a lot. Now I'm craving pasta salad! LOL

Kathy, I make one similar to this (no Newman's dressing, I make my own). I will post some pix of it in 'Photo Albums'. I used all kinds (shapes) of WHEAT pastas in it. Kathy, I made this salad Saturday morning, and we ate it with smoked beef Kielbasa that evening! It was so good. I couldn't find the Italian Parmesan dressing, so I bought Newman's Lite Italian dressing. It was especially good (better) yesterday! This is the kind of salad (for me, anyway) that has that more-ish taste.....you can't get enough...you want, more, more, more!  Thanks for sharing this with us. I'm saving it to make again!

Hey Lisa...I'm another one who does have a food processor and does-NOT-use it....not only do I not like cleaning it, I LIKE THINGS ''ROUGH CHOPPED'' BY HAND. Just seems to look more like it's homemade to me when the chopped items are uneven. I'm going to make this one anyway for me -I'll have great lunches all week.  I like the idea of adding chicken. I have added tuna to leftover pasta salad and I like that as well. For years I made this salad and couldn't figure out what was missing. Then, at a Italian restaurant we love, I ordered their pasta salad and found that it had big chuncks of artichoke hearts. I realized what I was missing and have been including them ever since. I agree with you all about the processor. Mine is about 20 years old and sits in the back of the appliance pantry. It comes out about twice a year. I use it mostly when I just don't have the time to chop. Over the years, I've added cooked chicken to this and made a main dish out of it. Really good as well. Kathy

THIS IS ANOTHER DISH I TAKE TO BBQ'S AND POTLUCKS. IT'S ALWAYS EMPTY WHEN I LEAVE! THIS PASTA IS BEST WHEN MADE A DAY AHEAD OF TIME SO FLAVORS HAVE A CHANCE TO MINGLE. ALSO, THE FOOD PROCESSOR MAKES THIS INCREDIBLY EASY AND FAST! 1lb Large Shell Pasta 1 C Chopped Red Onion 1 Yellow Bell Pepper, Chopped 1 Can Large Olives Chopped 1 Jar Artichoke Hearts packed in Olive Oil, reserving oil 1 lb Shredded Parmesan Cheese 1 bottle Newman's Own Italian Parmesan Salad Dressing Cook Pasta according to package directions. When pasta is done, immediately rinse with cold water until all pasta is cool. Chop all vegetables and artichoke hearts, mix with dressing and oil. Stir in pasta. Chill completely, mix with cheese.
