Debra, this sure sounds like a good and hearty soup, and it's very quick to make. There is nothing like homemade soup when you are feeling ill. Thanks for sharing your mom's recipe.

Mom's Famous Chicken Soup

Mom's Famous Chicken Soup Servings: 8 hearty portions Preparation Time: Approximately 30 minutes. 3 Cups of Hot Water 3 Chicken Bouillon Cubes 1 Medium Spanish Onion, cut up in bite size pieces 1 Cup Frozen Sweet Peas 1 Cup Frozen Sweet Niblet Corn 1 Cup Baby Carrots , cut up in bite size pieces 1 Cup Potatoes, cut up in bite size pieces 1 Can Campbell's Cream of Chicken Soup (you may use either a small or large can. Large for more creamy, thick, chowder type soup.) 1 Large Can Swanson's Chunk White Chicken 4 slices American Cheese Optional: 1 Tablespoon Louisiana Hot Sauce (or to taste) Note: You may also add leftovers such as Macaroni and Cheese or rice. This will increase your amount of servings by the amount added. You may also substitute vegetables you dislike for those you do. In a Dutch Oven or large Soup pan add water, bouillon cubes, onion and carrots. Cook on high until bouillon cubes have dissolved and carrots are crisp-tender. Add potatoes and cook until they are crisp tender. Add frozen vegetables cook until they are thawed. Add Cream of Chicken soup. Put Chicken in a bowl and stir it up, breaking the pieces apart and slightly shredding it up. Add to soup and stir. Heat thoroughly. Unwrap cheese slices and add them to the soup. Soup is ready to serve when cheese is completely melted. If you like spicy soup you can add the hot sauce to the soup before serving. Note: This soup also seems to help ease the symptoms of the common cold and Sinusitis.
