As I was reading your recipe Cin, I thought is sounds alot like a "Lemon Lush" recipe I make! When you mentioned coconut, and coconut cream. Thanks for posting this!

David, let me know what flavor you make and how you like it.
By the way my son towers over me, as I am barely a tad over 5' 2''....but have a couple relatives around 6' 8''.

Shan, I'm sure she did..as it is a very old recipe. My children loved it when they were growing up and they still love it.
My oldest son was born in 1966 and he grew up on it.....he is now 6 ft 4 inches ;)

Cin, I think that I remember my gram making something similar to this when I was little girl. I can't wait to see if this what I think it is. LOL

    4-LAYER DELIGHT
    1st Layer:
    1-stk oleo
    1-C flour
    1/2-C chopped pecans

Cream above ingredients, pat to spread in a the
bottom and up sides a bit of a 9"X12" baking pan
for 20 minutes in a 350 degree oven, then let
    cool completely.

    2nd Layer:
    1-8oz cream cheese
    1-C cool whip
    1-C powdered sugar
chocolate flakes or *curls(from chocolate bar)
    crushed pecans

Mix and spread on 1st Layer, sprinkle w/pecan pieces
and flakes or *curls of chocolate.

    3rd Layer:
2-sm. boxes of chocolate pudding (instant or cooked)
    3-C milk (for Instant-----if cooked use 3 1/2-C milk)

Blend instant pudding until thickened and spread over
2nd Layer; if cooked pudding do according to directions
for pie and let slightly cool before spreading over 2nd Layer
    .

    4th Layer
    cool whip
    crushed pecans
    chocolate flakes or *curls

Spread enough cool whip over top of 3rd Layer to
cover well........sprinkle pecans and chocolate flakes
or *curls on top to decorate.

*chocolate curls: take a solid dark chocolate candy bar
and run across cheese grater to make curls.

P.S. I have made this for YEARS, since the middle 60's.............with all kinds of puddings.....butterscotch, coconut cream, french vanilla, pistachio, lemon......etc.

Just adjust your toppings to the flavor you use.....for instance, use flaked coconut when using coconut cream pudding, crush butterscotch chips when using butterscotch pudding.... and so forth.
