    I have to try to make fudge- my hubby loves it. He loves it with white chocolate- he always buys a chunk from the mall when he's there.

    I found his on the internet today....;)

    Simple Fudge (w/variations)

    1-1/2 cups sugar
    1 5-ounce can (2/3 cup) evaporated milk
    1/2 cup butter
    2 cups tiny marshmallows
    1 cup semisweet chocolate pieces or chopped bittersweet chocolate
    1/2 cup chopped walnuts or pecans
    1/2 teaspoon vanilla

    Line an 8x8x2-inch baking pan with foil, extending the foil over the edges of the pan. Butter the foil; set pan aside.
    Butter the sides of a 2-quart heavy saucepan. In saucepan combine sugar, evaporated milk, and butter. Cook and stir over medium-high heat until mixture boils (about 10 minutes). Reduce heat to medium; continue cooking, stirring constantly, for 6 minutes.
    Remove saucepan from heat. Add marshmallows, chocolate pieces, walnuts, and vanilla; stir until marshmallows and chocolate melt and mixture is combined. Beat by hand for 1 minute.
    Spread fudge evenly in the prepared pan. Score into squares while warm. Cover and chill for 2 to 3 hours or until firm. When fudge is firm, use foil to lift it out of pan. Cut fudge into squares. Store tightly covered in the refrigerator for up to 1 month. Makes about 2 pounds (64 pieces).

    Peanut Butter-Chocolate Fudge: Prepare as above, except substitute 1/2 cup peanut butter for the butter and, if desired, peanuts for the walnuts/pecans.

    Nutrition Facts per piece: 58 cal., 3 g total fat (1 g sat. fat), 1 mg chol., 14 mg sodium, 9 g carbo., 0 g fiber, 1 g pro.
    Daily Values: 0% vit. A, 0% vit. C, 1% calcium, 1% iron
    Exchanges: 1/2 Other Carbo., 1/2 Fat

    Microwave Directions: In a 2-1/2-quart microwave-safe bowl microwave butter, uncovered, on 100 percent power (high) for 45 to 60 seconds (for 1,000- to 1,300-watt ovens) or 60 to 75 seconds (for 600- to 800-watt ovens) or until melted. Stir in the sugar and evaporated milk. Microwave, uncovered, on high for 7 minutes (for 1,000- to 1,300-watt ovens) or 10 minutes (for 600- to 800-watt ovens), stirring every 3 minutes. Carefully remove bowl from microwave oven. Add marshmallows, chocolate pieces, nuts, and vanilla, stirring until marshmallows and chocolate are melted and mixture is combined. Beat by hand for 1 minute. Pour into prepared pan; continue as above.

    Penny, I went to a church dinner tonight and we had a little different desert. I thought it was very tasty. She made one with cherry pie filling and one with apple pie filling. She wrote the recipe down so I will type in for you what she wrote.

    Pie
    Place 2 cans pie filling in ungreased pan. Place enough thick sliced white bread (with crust cut off) to cover top. Melt 1 stick margarine. Add 1 cup sugar, 3 heaping tablespoons flour (self rising), and 1 egg. Pour over bread and filling. Let stand 10 - 15 minutes. Bake at 350 degrees until golden brown.

    She served it warm. It is also something you can serve with ice cream.

    And lets not forget:

    Peanut Butter Fudge
    1/4 cup butter
    1/4 cup light corn syrup
    1 jar (18oz) Peanut Butter
    1- 1/4 cups confectioners sugar
    1 tsp. vanilla extract

    Spray a 8in baking dish with cooking spray
    in 2 qt saucepan melt butter with corn syrup, add peanut butter.... cook untill smooth remove from heat & Stir in confecters sugar. Spread in sprayed pan, refrigerate for 2 hours.... cut into squares

    Here's another easy dish....the secret to Olive Garden's spaghetti sauce. You can now enjoy the Tuscan flavor right in your own home.

    Olive Garden's Spaghetti Sauce
    2 pounds ground round
    6 oz V-8 juice
    2 Tablespoon Oil
    1 jar Prego Spaghetti Sauce
    1 Can stewed tomatoes, (14 ounces)
    1 Envelope onion soup mix
    1/2 c Grape jelly

    Brown meat in oil until cooked. Crumble with fork, then drain. Stir in tomatoes, V-9 juice, Prego, soup mix and grape jelly. Cook, stirring often, 15 to 20 minutes or until jelly melts and sauce is piping hot. Serve with your favorite pasta.

    Robin, I went straight to your post because the first word was 'EASY' and I am not a baker but even I can make this. Looks great. Thanks for sharing.

    Thanks for mentioning the wooden spoon -- you also need to use a wooden spoon in this recipe when adding the sugar!

    RR...yours looks easier than mine, I think I'll definitely give it a try.
    Here is mine:
    Peanut Butter Fudge
    4 cups sugar
    1/2 cup light corn syrup, (I use white Karo syrup)
    2 sticks unsalted butter
    1 cup evaporated milk
    1 tablespoon pure vanilla extract
    9 ounces (1 cup) smooth peanut butter (I use Jif)
    2 heaping tablespoons marshmallow cream

    Lightly grease a 9 by 13-inch pan and set aside.
    In a large saucepan, combine the sugar, corn syrup, butter, and evaporated milk. Cook over medium heat, stirring occasionally, until it reaches 242.5 degrees F, between the soft and hard ball stages.

    Remove from the heat and stir in the remaining ingredients. Beat the mixture with a large wooden spoon until it starts to get stiff. Pour into the prepared pan and let harden.

    To serve, cut into pieces about 1 1/2-inches square and serve. Makes: about 4 dozen
