Didn't make it yet but I have most of the ingredients now. We kept forgetting to buy milk and every day I have these strawberry flavored shredded wheat for breakfast so it was getting desperate.  Mom was soo busy today I don't think she even had time for a cake but I'll try next week I think.

This looks so good! My mom is nuts for eclairs. I should make this, she'd probably go batty for it. It sounds really easy, too. I am SO into easy stuff

Eclaire Cake (from Recipe Exchange Club)

Eclaire Cake (from Recipe Exchange Club) One Box Graham Crackers 2 small boxes French Vanilla Pudding 3 1/2 cups milk 8 oz cool whip Tub of Chocolate frosting Line bottom of a 9x13 pan with graham crackers. (I use Nabisco Honey Maid in the blue box) Mix 2 small boxes of Jello French Vanilla pudding with 3/12 cups milk. Add 8oz thawed cool whip. Layer half the pudding mixture over the graham crackers. Layer graham crackers again. Layer remaining pudding. Layer graham crackers. Melt one tub chocolate frosting so you can pour, about 25-35 seconds in microwave.
