Honestly, I forgot all about having posted this. The next day my hubby came home from work early with a toothache so the day was filled with dentist visits and medicine runs.

I am still craving it so maybe I'll try to make it tomorrow. :) The vanilla sauce is so good I have to remind myself not to just drink it out of the container. :-p :-D

How did it work out, Lisa? I was always the anti-rice pudding person in my family's house too, and you're right that it was a texture thing. I should probably give it a try again, perhaps with your hot vanilla sauce. • Janet

I almost started my own thread and then thought to do a search for rice pudding before I posted my recipe. This is one I got from my mom. I am going to try to make it tomorrow. I think I'm the only one in the house that likes it; could be a texture issue. But for me it's perfect comfort food.

The vanilla sauce (recipe follows) makes this otherwise fairly bland dessert come to life.

Rice Pudding

Ingredients:

2 c milk
1 1/2 c cooked rice
1 1/2 T melted butter
1/2 c sugar
1/3 t salt
3 beaten eggs

In pot, heat milk; blend in rice and butter. In a bowl, combine sugar, salt, and eggs. Blend milk mixture into egg mixture and pour into buttered baking dish. Place baking dish in a pan of hot water and bake at 350° for 1 hour until set.

Hot Vanilla Sauce

1 c sugar
2 c water
2 t vanilla
2 T cornstarch
1/4 c butter
2 t nutmeg

In a pot, combine sugar and cornstarch. Slowly stir in water. Boil for one minute, stirring constantly. Stir in butter, vanilla, and nutmeg. Makes 2 cups vanilla sauce.

The combination of warmed syrup over cold rice pudding is one of my favorite childhood memories.

The company most famous for making the flavoring syrups is Torani. If you can't find any near you, you can do a search for them on google and order it online.

This recipe reminds me of a recipe for asian rice pudding I used to have. It used jasmine rice and either saki or plum wine depending on your personal taste preference. Your recipe makes me think that adding dried cherries to it would be really yummy too!

Scott......thanks for all the suggestions of where to find it.
Sometimes I've even found them at TJ MAXX and Tuesday Morning.
Only suggested the 'Liquor Store' because......it seems every town has one :^O

Try a good coffee store, it would be sold as a coffee flavoring syrup. We have a local coffee and tea shop that caries a wide variety of flavorings. If you have an Italian grocer, they sell it for Italian soda.

At the Liquor store.....since I don't drink Alcohol..I'm always looking for sub's.
But there are not always sub for everything though.
Ad if you are COOKING with alcohol, it mostly dissipates.
I like ''non-alcoholic Mocha Mud Slide'' in my coffee once in a while...yummo.

Scott..guess you and I will post ''rice pudding recipe'' since Jacqueline hasn't gotten back to us here yet.

Irish Cream Rice Pudding

1 quart whole milk
1 cup Arborio rice (An Italian white risotto rice that stays firm when cooked) *
2/3 cup sugar

3/4 cup dried currants, plumped in warm water and drained *
1/2 cup Irish cream liqueur (can use a non-alcoholic)
Butter cookies, for serving

Preheat the oven to 300°. Butter a 9-inch square baking dish.
In a medium saucepan, bring 3 cups milk to a simmer. Add the rice and sugar and stir until the sugar is dissolved.

Spread the mixture in the prepared dish, cover loosely with foil and bake for 30 minutes.
Stir and continue baking until the rice is tender, about 30 minutes more.

Remove from the oven and stir in the remaining 1 cup milk and the currants; let cool.

Divide the pudding among 6 whiskey glasses and top with Irish cream. Serve with the cookies.

*'currants'...variety of small/dark berries, dried; currants, a smaller version of the raisin, delicious in cakes, jams and other dishes

Here is one that I use.

Rice Pudding

2 c. cooked rice
2 eggs, slightly beaten
1/2 c. sugar
1 can evaporated milk
1/2 cup milk
1/2 tsp. vanilla
1/2 tsp. powdered cinnamon
1/4 c. raisins, chopped dried apricots or other dried fruit (optional)

Place rice in bowl, add all ingredients, stir to mix.
Pour into greased baking dish .
Bake 30-35 minutes in a 350 degree oven.
