Wow, this recipe goes way back! Thanks for bringing it to the front again, Jennifer. Crackers in a dessert still seem decidedly different, but there are always happy surprises out there. • Janet

I almost substituted graham crackers, but wasn't sure about that either! So I went ahead with the saltines, very different, but SO good!!! And I liked that it was so easy to make...it was ready for the oven in just a couple minutes.

No kidding, Jessica, crackers??? If you say it's good, I believe you. You are quite the baker. Very unusual dessert, not to be passed up. AND, if you say it tastes like cheesecake, it can't get any better than that. Very unique!!!! Thank you.

I made these the other day, and everyone that tried them really raved about them! Even my sister, and that's saying alot because she's one of the pickiest eaters, and one of the toughest food critics I know!! I wasn't sure how they would be with the saltine crumbs, that's a little unusual for a sweet dessert, but I am so glad I tried this...my sister says I have to make this for Thanksgiving! This is very similar in taste to cheesecake. 1 pkg lemon or yellow cake mix (I used yellow) 1/2 c. butter or margarine, softened 1 egg 2 c. finely crushed saltine crackers 3 egg yolks 1 can sweetened condensed milk 1/2 cup lemon juice Preheat oven to 350 degrees. Grease 15x10x1 inch pan. Combine the first 3 ingredients. Will be crumbly.Stir in cracker crumbs. Reserve 2 cups of the crumb mixture. Press remaining crumb mixture firmly in the bottom of prepared pan. Bake 15 minutes. Combine egg yolks, condensed milk, and lemon juice. Mix well. Spread evenly over crust. Crumble remaining crumb mixture evenly over top. Bake 20 minutes or til set. Cool. Cut into bars. Store in refrigeraor. Makes 3-4 dozen bars.
