    Thank you! I wish I could share them with all of you because I sure made tooooo many! We got I think 8 dozen out of it. I didn't even finish them all and that's after my niece took home more than half of the lot to distribute among her hubby, friends and inlaws!

    We successfully made the rainbow cookies (and I made some cannoli as well) and they came out sooo good! Everyone loved them! I uploaded some photos to my photo album so you can see how they came out:

    (I didn't make the cannoli shells, those were Alessi brand, store bought.)

    I don't know if you can use ready made cookie dough but I think as long as you have the almond paste in there (that's what really gives them their special flavor), they will probably come out well. We put the almond paste into a food processor to mash it up good because it was so thick. I have the tiniest food processor, it hold like a cup or two so it took a long time to get all of it done. My niece was wonderful and did most of the work. I spread the jam, layered the cookies, and melted the chocolate while she spread it on. She wants to make them again.

    Oh, we didn't do such a great job making all the layers even, but it was our very first attempt so I think we will get better with practice!

    I love these cookies. Let us know how they turned out. I'm wondering if a lazy baker (me) could use store bought cookie dough in the recipe.

    My niece and I are going to tackle the somewhat daunting task of making those cool italian rainbow cookies that you can get in bakeries in NYC. Has anyone had these? They're awesome! I think I gained about 20 pounds during the height of my rainbow cookie lust, LOL. They're expensive, too. I think they're around 15 dollars for a pound.

    I will let you all know how they come out. Has anyone made these before?
