This cake was so beautiful to look at and really yummy to eat! Thanks for sharing some cake with me, Jennifer.
I'm getting a copy of the recipe right now so I can make it myself. This could so be adapted for other occasions, too!

I am totally making this, this weekend for a potluck. The theme is "Green" in honor of St. Patrick's day, so this is perfect.

I don't have any photos Violet, but I will definitely take one this St. Patrick's Day and post it! Imagine a white cake with emerald green swirls through the inside topped with white fluffy frosting with green sprinkles.

Jennifer, I've never heard of this but it sounds really fun and something different for the holiday. Might you have any photos of what this looks like when it's done? I'm having trouble imagining it, but I bet it tastes great!

This is the cake I make for St. Patricks Day every year. It's easy and my son loves it.

1 package (18-1/4 ounces) white cake mix
    2 packages( 3 ounces each) lime Jell-o
    1 cup boiling water
    1/2 cup cold water
    Topping:
    1 cup cold milk
1 package ( 3.4 ounces) instant vanilla pudding mix
1 tub ( 8 ounce) Cool Whip, thawed
    Green sprinkles

Prepare and bake cake according to package directions, using a greased 13-in. x 9-in. baking dish. Cool for 1 hour. In a small bowl, dissolve gelatin in boiling water; stir in cold water and set aside. With a meat fork or wooden skewer, poke holes about 2 in. apart into cooled cake. Slowly pour gelatin over cake; refrigerate. In a bowl, whisk milk and pudding mix for 2 minutes or until soft-set. Fold in Cool Whip. Spread over cake. Decorate with sprinkles. Cover and refrigerate until serving.
This cake looks very pretty when you cut into it -with the green and white together. Poke cakes are so cool!:)
