Sweet Potato Casserole seems to be another of those traditions that hasn't made it across the border, or maybe it's just to this part of Canada? I like sweet potatoes/yams (using the names interchangeably, although I do know they're different!). But I'm more likely to have them roasted or baked, and lately I've seen them in the produce department already cut into French fry shapes for stir-fries or deep frying. Oh, and I've had them mashed too, in a half-and-half combo with regular mashed potatoes. Maybe it's time to give the casserole a try? • Janet

Angela , don't worry -it's not too much syrup, it tastes great. This recipe doesn't call for brown sugar , like most sweet potato recipes, so the maple syrup is the sweetener. Yipee! I was looking for one with marshmallows instead of the nut topping! My dad can't eat nuts anymore! I've never seen that much maple syrup used before, we love the stuff, so I can't wait to try this one! -- ~*~Angela~*~

I got this recipe on the Food Network 5 years ago and I have never made canned yams any other way since then. Even people who don't like yams love this-kids and adults. 2 large cans yams-(40 ounces each)-mostly drained, a little juice left is good 1 large can( about 20 ounces) crushed pineapple in juice,undrained 1 stick butter, softened 1 cup maple syrup mini marshmallows Mash together all ingredients except marshmallows, in a large bowl with a potato masher until smooth and well combined. Spread mixture into a 13x 9 inch baking dish that has been coated with no-stick cooking spray. Bake at 375 for 1 hour, until bubbly. Top with mini marshmallows and bake 10-15 minutes more, until marshmallows are browned but not melted. Keep an eye on them , they go from browned to melted very quick. Let stand 5-10 minutes before serving, it's very hot. about 10 servings -- Jennifer When baking, follow directions.
